Most catering companies, you either have a team of chefs or, somebody that just goes out and buys a lot of prepackaged foods. What differentiates me is that I am the sole chef and I cook single-handedly, almost every ingredient that is served and it's most of the time it's made from scratch.

So I really put that true emphasis on the food, the flavor and the customization that not a lot of caterers bring to the table, so to say.

Melissa Eboli, aka Chef via Melissa, is a nutritional chef based out of New York. Her services include event catering, dinner parties, cooking classes and recipe development.

But she's not in the kitchen. She could be seen making great guest appearances on Dr Oz. In addition to being published in the likes of Women's Day, Reader's Digest and Huffington Post to name a few. Her passion as a chef is to create healthy dishes with a modern twist using the cleanest of ingredients.
